Fresh herbs are the best way to experience plants in their raw, vibrant form, their true nature, aroma, and energetic qualities. Many delicate compounds, such as enzymes, vitamins, and subtle aromatic molecules, are strongest in fresh herbs and can be partially lost during drying or other processing. Using fresh herbs allows you to connect more closely with the plant and understand its character before it becomes a medicine or culinary ingredient.

Storing fresh herbs

To keep your herbs fresh for a few days before using them, remove any rubber bands and treat them as you would a bouquet of flowers. Place the stems in a jar with about 5 cm of filtered water. Herbs like lemon balm, bee balm, catnip, nettle, and tulsi will last well in the fridge this way, with the water changed daily.

For heartier herbs, such as sage, thyme, rosemary, oregano, or even roots wrap the herbs lightly in a damp paper towel or linen and place them in the vegetable tray of the refrigerator. They can stay fresh for up to a week. 

How to use fresh herbs

Fresh herbs can be used in multiple ways to extract their properties and enjoy their flavor:

  1. Teas, infusions and decoctions: Use a handful of finely chopped fresh herbs per cup of hot water. Steep 5–15 minutes, strain, and drink.

  2. Tinctures: Blend fresh with alcohol or glycerine to extract medicinal compounds. 
  3. Culinary: Fresh herbs add flavor, aroma, nutrients and vitality to dishes. With the CSA, recipes are provided each month to help you use them creatively in your kitchen.
